Tomato Pesto Pasta Salad
_Tomatoes are really great and healthy ingredient for cooking and in salads. Check this delicious easy to do in just a few minutes recipe below!
below is a transcribe of the video above.
Sometimes the best recipe is when you take something store bought, add a few fresh ingredients and turn it into something into truly phenomenal. Today I’m taking an ordinary jar of tomato pesto and turning it into the most amazing salad you will ever eat in your life! It’s the Tomato Pesto Pasta Salad.
I’m just boiling some pasta here I got 500 grams of penne pasta. Of course you can use any pasta that you prefer. You could use penne, you could use spirals, try to use any kind of short pasta. After this is cooked we are going transfer it the colander and run some cold water over just to cool off the pasta and then give the colander a good shake, really give it a shake to get rid of all the excess water, then we’ll be able to move on.
Here’s our pasta cooked and it’s nice and cold now, I’ve drained it all off. Now first things first we’re gonna add in a jar of store bought tomato pesto. This is a little jar of pesto, about 200 grams and we’re just gonna stir that through. I transferred the pasta on to a serving plate, now I’m gonna add on some chicken. I pouched some chicken earlier today and I let it cool off a simply diced some little chunks, you could just roast some chicken, you could also pop up some store bought chicken just rip all the meat off.
You can do whatever you like with it… I am also adding in some cherry tomatoes which I just quartered. I’m just gonna scatter them around. I’m also going to put some freshly grated parmesan cheese, just a little bit you don’t need a lot because the pesto sauce already has a little bit of parmesan or pecorino. For a little bit of color and a little bit of flavour we are going to scupper over some freshly chopped parsley. How sensational does this look and how simple was it, I mean there was no virtually no effort involved in this.
RECIPE FACT SHEET
500g Penne Pasta (cooked as per packet directions)
1 Jar of Tomato Pesto Sauce (about 200g)
200g of Cooked Chicken Breast Fillet, cubed (I used Poached Chicken)
Cherry Tomatoes (quartered)
Freshly Grated Parmasen Cheese
Freshly Chopped Parsley
Preparation Time: 10 minutes
Cooking Time: About 10 -15 minutes
SERVES 4 – 8

Tomato Cooking Tips
There are really a lot things we need to learn about tomatoes. below I provided several tips all about tomatoes and how to handle tomatoes in cooking!
Read these tips and learn to get more from your tomato and to have a very enjoyable cooking and "tomatoey" experience!
No other vegetable or fruit is more widely used or consumed than the tomato. From pizza to ketchup to sun-dried tomatoes and all in between, the tomato has an infinite number of applications on the dinner table. They can even be candied and used in cakes also fried green tomatoes are a popular in Southern dishes.
Tomato Cooking Tips and Hints • A good serrated knife is far superior to a flat-edged knife for slicing tomatoes. If you use a flat-edged knife, be certain it is very sharp or you will squash and bruise the tomato flesh when slicing.
• Scooped-out cherry tomatoes make great edible cups for fish or egg salad, herbed cheese, or caviar as an appetizer. Use a standard-sized hollowed tomato filled with any variety of stuffing's as a side dish, either baked, raw or as a condiment bowl for sauces. Turn the hollowed out tomatoes upside down to drain for about ten minutes before filling. When baking stuffed tomatoes, place them in a muffin tin for stability.
• Do not use an aluminum pot, pan or utensil when cooking tomatoes. The acid in the tomato reacts unfavorably with the aluminum. Using aluminum makes the cooked tomatoes more bitter and fades the color. The dish will also absorb some of the aluminum and the acid in the tomatoes can pit and discolor the aluminum cookware.
• If your tomatoes seem overly acidic, you can add a sprinkle of sugar and salt, both of which will bring out the flavor.
• Rather than sugar, I prefer adding grated carrot to marinara sauce to combat acidity. The carrot disintegrates in the sauce and adds sweetness but no hint of carrot flavor.
• In tomato sauce, a quarter teaspoon of baking soda per gallon will also help alleviate acidity.
• The high acid content of the tomato will naturally slow down the cooking process of some other foods. For example, beans cooked with tomatoes added may take up to twenty percent more cooking time than without.
• Plum tomatoes are best used for sauces. Globe, cherry, and grape tomatoes are best for eating raw, although all varieties are good.
• If your only choice is the mealy, tasteless supermarket fresh tomato, you may well be better off using canned tomatoes in cooked recipes.
• Herbs that marry well with tomatoes include basil, oregano, marjoram, pepper, dill weed, thyme, garlic, bay leaf, celery seed, sesame seed, tarragon, chives, and parsley.
• If you happen to be the unfortunate victim of the wrong end of a skunk, tomato juice will neutralize butyl mercaptan, the prime ingredient in the stinky defensive spray.
