Ellie's Peach French Toast Bake
•1 large whole-wheat baguette (about 8 ounces)
•4 large eggs
•4 large egg whites
•1 cup nonfat milk
•1 teaspoon vanilla extract
•5 cups frozen unsweetened sliced peaches, thawed
•2 tablespoons firmly packed brown sugar
•1/4 teaspoon ground cinnamon
•1-1⁄2 cups plain nonfat yogurt (optional)
•3⁄4 cup pure maple syrup (optional)
1.Coat a 9x13-inch baking pan with cooking spray. Cut the baguette into 1⁄2-inch-thick slices and arrange them in a single layer in the pan.
2.In a medium bowl, whisk together the whole eggs, egg whites, milk, and vanilla. Pour the egg mixture over the bread in the pan. Scatter the peach slices evenly over the bread. Sprinkle with the brown sugar and cinnamon. Cover with plastic wrap and refrigerate overnight.
3.Preheat the oven to 350 degrees F. Uncover and bake until it is slightly puffed and the bread is golden brown, about 40 minutes. Top with yogurt and drizzle with maple syrup, if desired.

Chicken Salad Sandwiches

Perfect for an active child, especially during growth spurt years. Calories gives energy and protein from meat helps to provide amino acids for your growing kid. So this next recipe will be just right!

Yield: 6 sandwiches
2 cups chopped rotisserie chicken, skin removed
1/2 cup diced celery
1/3 cup diced carrot
1/3 cup diced red onion
1/2 cup mayonnaise with olive oil
2 tablespoons yellow mustard
1 teaspoon celery salt
1 teaspoon granulated garlic
Pinch of paprika
Freshly ground pepper
6 whole-wheat sourdough rolls, split and toasted Lettuce and tomato, for topping
Combine the chicken, celery, carrot, red onion, mayonnaise, mustard, celery salt, granulated garlic, paprika and 1 teaspoon pepper in a bowl. Mix until combined. Serve the chicken salad on the toasted rolls with lettuce and tomato.

Correct Time For Lunch
In our daily life we need to have our lunch between 12:30 PM and 1:00 PM. Because, our body health will be worsely affected by the delayed taking of meals. Whenever we are careless about the correct timing of lunch there are many chances of being affected by diseases like indigestion and gastric problems. And also we must avoid sweets or fruits just before taking our lunch. If we take sweets or chocolates just before lunch we may lose our feeling of tate and hungry. If we lose our healthy lunch, on that day we would not able to concentrate on any works. So, the lunch is very important which can be a factor of our good health.
It will be nice if we add enough quantity of variety of vegetables in our lunch. After finishing lunch, we can drink any fruit juice like lemon, apple or grapes. However, we should be careful about the total quantity of food that we take in our lunch. If we take excess quantity of food as our lunch, we may suffer from some health problems including obesity and indigestion.

Importance of School Lunch
As my kids have gotten older, I’ve realized that helping my kids eat healthy is a balance between offering healthy foods, giving them control of some of their meals, and helping them learn to incorporate the less healthy foods with the healthy foods. Concerning lunch specifically:
- Given how much of their day is decided by others, especially at school, I give my kids total control over what they have for lunch among the foods we have at home.
- I've started to realize that lunch is not just a meal in a day but a meal that has to get my kids through the entire day including learning and after school activities. It is perhaps their most important energy meal when viewed this way.
- Fruits and veggies are crucial to their overall growth but don’t always get that energy jolt needed to learn. So, I tend reserve fruits and veggies for dinner and after-school snacks and add more carbohydrates like pretzels and granola bars for lunch and in-school snacks. The energy they provide lasts longer for my girls.
- It occurred to me that getting through a school day is like a mini marathon for my kids but involving both body and mind. Just like with a marathon, hydration becomes as crucial as energy. So, I’ve put more emphasis on what they drink during the day and how much.
- When my kids have a sugary snack occurring at school, we don’t pack a snack that day or pack veggie sticks but leave lunch untouched. Lunch needs to happen as planned to learn well.
